- 1 tablespoon lemon juice
- 2 tablespoons cornstarch
For assembling:
- 2 tablespoons butter, cut into small pieces
- 1 egg (for egg wash)
- 1 tablespoon milk or water (for egg wash)
- Additional sugar and cinnamon for sprinkling
**Instructions:**
For the crust:
1. In a large bowl, mix the flour and salt together. Add the cold butter cubes and use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.
2. Gradually add the ice water, one tablespoon at a time, and mix until the dough comes together. Be careful not to overwork the dough. Divide the dough into two equal portions, shape into discs, and wrap each in plastic wrap. Refrigerate for at least 1 hour before using.
For the filling:
1. In a large bowl, combine the sliced apples, granulated sugar, brown sugar, cinnamon, nutmeg, salt, lemon juice, and cornstarch. Toss to coat the apples evenly. Let the mixture sit for about 15-20 minutes to allow the flavors to meld.
2. Preheat your oven to 425°F (220°C).
Assembling the pie:
1. Roll out one of the chilled dough discs on a lightly floured surface to fit a 9-inch pie pan. Gently transfer the rolled-out dough to the pie pan, pressing it into the bottom and up the sides.
2. Spoon the apple filling into the crust, packing it down slightly and mounding it in the center. Dot the filling with small pieces of butter.
3. Roll out the second chilled dough disc and place it over the apple filling. You can either cover the pie completely or create a lattice pattern by cutting the dough into strips and weaving them over the filling.
4. Trim any excess dough hanging over the edges and crimp the edges to seal the pie.
5. In a small bowl, whisk together the egg and milk or water to make an egg wash. Brush the egg wash over the top crust.
6. If desired, sprinkle a little sugar and cinnamon over the top for extra flavor and a golden crust.
7. Place the pie on a baking sheet to catch any drips and bake in the preheated oven for 45-50 minutes, or until the crust is golden brown and the filling is bubbly.
8. Once baked, remove the pie from the oven and let it cool on a wire rack before serving.
